Good evening everyone! I hope you are all well? What have you been up to? Today's recipe is for a Quesadilla like dish, with some yummy sweet potato chips to go with it. They are very versatile so you can adapt the recipe to your favourite ingredients if you wish!
To make the sweet potato chips I simply finely chopped 2 large sweet potatoes into slices, sprinkled with black pepper and baked for 30-40 minutes.
To make the quesadillas, you will need:
- 2 large wholemeal tortilla wraps
- 1 large red pepper
- 1 tin of tuna
- 3 tbsp mayonnaise
- Half a mug of peas (soaked in boiling water)
- 1 handful of grated cheese
- Place the wraps aside and mix the rest of your ingredients in a large bowl.
- Into each wrap, place half of the mixture onto half of the tortilla. Fold over the tortilla so it should form a semi circle shape.
- Place on a baking tray and bake for 10-15 minutes.
- Serve with your sweet potato chips or another side of your choice.
