To make (2-3 portions), you will need:
- 1 large courgette (chopped)
- 1 large onion (peeled and chopped)
- 2 handfuls of curly leaf kale
- 1 can of chopped tomatoes
- 1 clove of garlic (finely chopped)
- 1 tbsp of tomato puree
- Seasoning as desired (I use salt and pepper, oregano and a splash of balsamic vinegar)
- In a pan on a medium heat, gently fry the onion for 2-3 minutes.
- Add the courgette and kale and continue to fry for another 3 minutes.
- Add the chopped tomatoes, garlic, tomato puree and seasoning.
- Leave to simmer gently for 15-20 minutes until it reaches the consistency you like.
I like to serve this with fresh bread or pasta!
