Yummy banana bread!

Today was a baking day and I decided to use up some ripe bananas to make a banana bread - one of my favourites! This one is made using Greek yoghurt which makes the banana bread very moist and gooey.

The perfect mid-afternoon snack with a cup of tea!

Here is the recipe (taken from Annabel Karmel) for anyone interested. Simply blend the sugar, egg and butter before adding the rest of the ingredients - then, add to a greased loaf tin and cook at 180c for 1 hour - 1 hour 15mins.

        100g butter/margarine
        100g brown sugar
        1 egg
        450g bananas (mashed)
        3 tablespoons Greek yoghurt
        1 teaspoon of vanilla extract
        250g plain flour
        1 tablespoon of baking powder
        1 teaspoon of ground cinnamon
        Pinch of salt
        90g raisins

An introduction

I figured the best way to start my blog is by briefly introducing myself and a few of the things that make me happy.

I'm 21 years old and live in East Sussex with my lovely boyfriend.

I love to bake and cook. Living on a student budget whilst also trying to be (relatively) healthy has taught me a lot and I may have to share some of my favourite recipes with you now and again. Any ideas are also welcome!

I love spending time with my family and friends (who doesn't!). Although I must admit that most evenings you will find me snuggled under a blanket with a cup of tea watching an episode of Friends, Come Dine With Me or Broadchurch.

I feel like I may have just sold myself in the most unexciting way possible but I promise I do have a life..somewhere...
