Books I've Been Reading #1

Hello everyone! How are you all today? I thought I would do a slightly different post today. Last month I finally got round to joining our local library and have been enjoying reading a lot more books! I had kind of got in to the habit of simply reading books for academic purposes rather than enjoyment so it has been nice to read for pleasure again. Here are a few books I've been reading, both ones I have borrowed and ones I have bought, and what I thought:

Sweet treats

Hello everyone! Today I thought I would share one of my recipes from a little while back. Those old posts seem to get forgotten about but this one has to be one of my favourites! These sweet treats make the perfect snack, especially with a cup of tea!

It's a wrap!

Good evening everyone! I hope you are all well? What have you been up to? Hopefully you might have seen that I have been busy making lots of handmade gifts - if not, please take a look over on my shop page and let me know what you think. Simply click on 'shop' in the menu bar. All gifts are £4 or under with free p&p too so very affordable.

Today's recipe is for a Quesadilla like dish, with some yummy sweet potato chips to go with it. They are very versatile so you can adapt the recipe to your favourite ingredients if you wish!

To make the sweet potato chips I simply finely chopped 2 large sweet potatoes into slices, sprinkled with black pepper and baked for 30-40 minutes.

To make the quesadillas, you will need:
  • 2 large wholemeal tortilla wraps
  • 1 large red pepper
  • 1 tin of tuna
  • 3 tbsp mayonnaise
  • Half a mug of peas (soaked in boiling water)
  • 1 handful of grated cheese

  1. Place the wraps aside and mix the rest of your ingredients in a large bowl.
  2. Into each wrap, place half of the mixture onto half of the tortilla. Fold over the tortilla so it should form a semi circle shape.
  3. Place on a baking tray and bake for 10-15 minutes.
  4. Serve with your sweet potato chips or another side of your choice.

A trip up North

Hello everyone! Hope you are all okay? What have you all been doing? I mentioned in my last post that we went home for a week to visit our families and relaxed. I thought I would share a few pictures from a few of the places we went to visit, as well as a special appearance from my cat Poppy!

Venice - Part 3

Hi everyone! How are you all? We have just enjoyed a week back home visiting family which was a lovely break. You may all be a little Venice'd out now with my posts but I just wanted to share a final few pictures with you.

I really would recommend a visit to Venice if you are considering it! We got a great deal for a 3 night stay in a lovely hotel - about £550 in total for the two of us.

I am off my training for summer now so keep your eyes peeled for a lot more frequent posts. Also, I am in the process of creating more handmade items that I am excited to share with you!

Venice - Part 2

Hi everyone! How are you all today? This post is the second part of our Venice trip. Even though we only stayed for 3 nights, we did manage to see a lot of the main attractions such as Saint Mark's square, the museums, a trip up the tower at Saint Mark's and a boat ride to San Giorgio.

Overall, the entrance price to the attractions were fairly reasonable. Saint Mark's Basilica is actually free although the queues can get pretty enormous - not ideal in 37c heat! The trip up the tower cost us 8 euros and the entrance to the museums cost us 18 euros each.

However, money-wise, I would definitely be careful about where you choose to eat and drink. A lot of the cafes are waiter service so a service and cover charge will be added to your bill and a simple glass of coca cola in the square will set you back 10 euros! I would take your time to wander around all the little streets. We loved the Italian food though (although we may have over done the carbs a little).

Here are some more photos from our trip:

Venice - Part 1

Hello everyone! You may have noticed I have shortly disappeared from the blogging world because I was in VENICE! It was incredibly hot and expensive but we had a lovely time and got to see some of the amazing sights all in the three days we were there. I am going to split my Venice trip over a few posts as there are just too many attractions to tell you about and pictures to show you.

When we arrived in Venice, we took the bus from the airport to the city. This cost 8 euros and was really quick. Over our first evening and first full day we explored the area close to our hotel as well as San Marco, home to Saint Mark's Square. Venice is such a beautiful city and we felt it was completely different at night to what it was during the day. We also purchased a 2 day water-bus ticket, a handy way for getting around, for 30 euros each. I would definitely recommend getting one of these, although don't make the mistake we did and get on the wrong boat and end up on another island!

Here are some photos from our first night and full day:

Summer Plans

Hello everyone! How are you all? I am sorry that posts have not been as frequent these past few weeks - my teacher training has been very time consuming, but I have loved it! Although I am looking forward to a little more baking and cooking time over the summer break I must admit.

We have lots of exciting things planned this summer, including a trip to Venice very soon and a trip to New York. I feel incredibly lucky to be able to visit these two beautiful places in the space of a couple of months and would love any recommendations you have. We want to see as much as we can!

I'll look forward to hearing your suggestions!
