Cod with a Homemade Basil Dressing

Hello everyone and Happy Easter! Hope you are all okay. Today's recipe is for baked cod with a home-made basil dressing, sweet potato mash and vegetables. I wasn't sure how the combination of everything would turn out but it really did make a yummy, nutritious dinner! And it's straightforward to make too. 



To make, you will need:

  • 2 medium sized cod fillets (I bought 300g of cod loin from the fresh counter, but you could easily use frozen)
  • 1 large sweet potato (peeled and chopped)
  • Vegetables of your choice (I went for sugar snap peas and baby corn)
  • 2 good sized handfuls of fresh basil
  • 1 tsp of oil
  • 1 tsp of tomato puree
  • 2 tbsp of parmesan cheese
  • Salt and pepper

  1. Prepare the cod by seasoning with salt and pepper and wrapping in foil. Place on a baking tray and bake in the oven at 180c (The cod will take around 30 minutes).
  2. After 5-10 minutes of the cod being in the oven, place the sweet potato in a pan of boiling water to soften.
  3. After a further 10 minutes, place the vegetables on to boil for 10 minutes.
  4. Prepare the basil dressing by blending the basil, oil, tomato puree and parmesan cheese until it has reached a good consistency. I used a handheld blender for this part.
  5. Once the sweet potato is cooked, drain and mash.
  6. Serve with the vegetables, baked cod and a generous drizzle of the basil dressing.
